New Potatoes: We grow yellow Yukon Golds and red norland.  New potatoes are freshly dug and should be used right away!  They do NOT require peeling, as the skins are not hardened.  Coat in olive oil, herbs (e.g. rosemary, thyme, oregano, and garlic), salt and pepper, and roast until tender.  Alternatively, boil and add butter.  Store in a cool, dark place, as sunlight will cause greening.  Store away from onions, which speed rotting.
