Amaranth: Grown for leaves used in sauces, this vegetable (or leaf) amaranth is popular in southern Asia, West Africa, and the West Indies, and is known by many names, including ‘Calaloo.’  The green has a unique nutty taste and is high in calcium -- a nice substitute for spinach

Cooking suggestions: strip individual leaves from the stem, chop, and steam lightly. Set aside and prepare a dressing of Extra Virgin olive oil, fresh lemon juice, garlic, and salt to taste. Add dressing to steamed amaranth and serve over boiled potatoes or use as a side dish.
