Beets: Our sweet Italian variety, Chioggia, has fantastic white and pink rings inside.  Boil for few minutes or coat in olive oil and roast for one hour at 350° F.  To increase storage life, cut off the leaves prior to refrigeration.  The highly nutritious leaves are also edible fresh in salads or as a steamed green.
