Several crops produced, here at Redbud farm consist of vegetables, root crops
and hot peppers of tropical origin. These vegetables, grown extensively in all
parts of West Africa, are used for domestic consumption, and many are commonly
found in markets. They are typically used as steamed vegetables, often added to
soups and stews. In some parts of West Africa, where access to animal protein
is limited, such leafy vegetables make-up a large portion of a family’s diet
and provide many necessary nutrients, contributing significant amounts of
protein and essential vitamins.
